Beetroot!

Just a short note on some of the health benefits of this tasty vegetable:

~ Anti-oxidant

~ Rich in iron; which means that it is a blood purifier, helps with anemia & fatigue

~ Contains vitamins A, B6 & C

~ Contains folic acid; which is essential for normal tissue growth

~ Reduces the risk of heart attacks & strokes

~ Reduces blood pressure

~ Virtually fat-free & low in calories

My favourite way of having beetroot is with yogurt. You simply grate some cooked beetroot and mix it with yogurt. Add a little bit of dried mint, olive oil & a pinch of salt. Finito!
